Viticulture: Organic

(certification as of the 2020

vintage) + biodynamic

principles

Vineyards: The grapes come

from one vineyard of Blauer

Portugieser called ‘Holz Gasse.’

the soils here are richer than in

a lot of their other plots, have

better water retention, and

hence tend to give higher yields

but also more concentrated

grapes. In some years they also

make a separate vinification

from this plot for the ‘Alte

Reben’ range but in 2018 all of

the grapes went into this wine.

Vinification: The grapes were

half destemmed, half whole

bunch. They were fermented in

the same tank with the whole

bunches at the bottom. Short

maceration of 5-6 days, then

pressed straight into steel

tanks. The wine then stayed on

its fine lees for 10 months prior

to bottling with a small sulphur

addition. Unfined, unfiltered.
