Viticulture: Organic

Vineyards: The grapes for

this wine come from three

blocks of Gemischter Satz.

Two are very old and located

in the ‘Auflangen’ vineyard

(hilly, sloped), not far from the

old vineyard that produced

his 2015 ‘Ruhe In Frieden’

wine. The third block is in the

‘Oberersatz’ vineyard, a slighly

flatter parcel with vines ranging

from 20 to 50 years old. All the

parcels are on limestone and

clay but with varying amounts

of topsoil and stones in the

upper layer.

Vinification: The grapes

were destemmed and were

fermented in steel (all varieties

co-fermented) with just under

two days of skin contact. After

pressing, 2/3 of the wine went

into one old 2500L barrel

whilst the rest went into steel

tanks. All the wine aged for 12

months, saw some occasional

battonage, and was bottled

with a tiny sulphite addition.

Unfined, unfiltered.
